Haven’t Forgotten My Hometown / Memleketimi Unutmadım: İspir Haricot Bean (Fasulye) Meal Night

Join us for the first of the “Haven’t Forgotten My Hometown / Memleketimi Unutmadım” series of fundraiser events, where people from different regions of Türkiye cook and serve their traditional local dishes. During this first event, Özden & İsmail Arslan will prepare and serve Ispir Haricot Bean (Fasulye) Meal from the  İspir district of Erzurum, Türkiye.

İspir Haricot Bean, which is famous for its early cooking, is one of the indispensables of the tables with its delicious taste. You can easily distinguish it with its smaller size. İspir beans have low values ​​in terms of lignin, calcium and magnesium compared to normal beans.

The story of İspir Haricot Bean goes back thousands of years. It is produced in traditional ways in the region that includes the fertile Çoruh Basin, with high altitude and low humidity level. İspir Bean production starts in October with the preparation of the field for the next season. Afterwards, a rake is thrown into the field and fertilization and planting is done with natural goat manure. Due to the mountainous terrain, mechanized agriculture is not common, so it is collected and sorted manually one by one. You can consume İspir Haricot Beans, which stands out with its features such as swelling in water, cooking early and not shelling when cooked, after soaking in cold water overnight, by cooking it with traditional methods.

Ahmet Çalık Great Hall and Kitchen are reserved for a private event.
